Double Chocolate Chip Cookies
Ingredients
- 1/2 cup butter, softened
- 3/4 cups white sugar
- 1 eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/3 cup cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cups semisweet chocolate chips
Directions
- Preheat oven to 350 degrees.
- In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended.
- Mix in the chocolate chips. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
- Bake for 9 to 11 minutes in the preheated oven, or just until set.
- Cool slightly on the cookie sheets before transferring to wire racks to cool completely.
Brown Sugar Maple Cookies
Ingredients
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/8 cup maple syrup
- 1/8 cup apple butter
- 1 egg
- 1 tsp vanilla extract
- 1 1/4 cups flour
- 1/2 tsp baking soda
- 1/4 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chocolate chips
- (optional) 1/4 cup pecans
- 2 tbsp butter
- 1/4 cup maple syrup
- 1/2 cup powdered sugar
- sea salt
Directions
- Preheat the oven to 350°
- Add 1/2 of your butter to a small saucepan set over medium heat, cooking until the butter begins to brown, about 3-4 minutes.
- Remove from the heat and transfer to a heatproof bowl. Stick in the freezer to chill, 10-15 minutes, but no longer.
- In a large mixing bowl, beat together the other half of the butter, the cooled browned butter, and the brown sugar until combined.
- Beat in the maple syrup, apple butter, egg, and vanilla, beating until creamy.
- In a separate bowl, combine the the flour, baking soda, cinnamon, and salt. Stir and then add it to your wet ingredients.
- Fold in chocolate chips and pecans.
- Bake for 10 minutes. Remove the pan from the oven and tap the baking sheet on the counter 2 times to flatten them down.
- Return to the oven and bake another 1-2 minutes or until the cookies are just beginning to set on the edges, but still doughy in the centre.
- Remove from the oven and tap the baking sheet on the counter 1-2 times to flatten them down again. Let the cookies cool on the baking sheet. They will continue to cook slightly as they sit on the baking sheet.
- Meanwhile, make the glaze. Melt together the butter and maple syrup in a small pot over medium heat. Remove from the heat and whisk in the powdered sugar, and a pinch of salt.
- Drizzle the glaze over the cookies and enjoy!
Breakfast Cookies
Ingredients
- 1 cup oats
- 3/4 cup whole wheat flour
- 1/2 cup all purpose flour
- 1/4 cup wheat germ
- 1/4 cup oat bran
- 1 tsp baking soda
- 1/4 tsp cinnamon
- 1 cup butter
- 1 egg
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1/2 tbsp vanilla extract
- 1/2 cup chopped pecans, walnuts or almonds
- 1/2 cup raisins
- 1/2 cup chopped pitted dates
- 6 whole dates cut lengthwise in half
Directions
- Preheat oven to 350 degrees
- Beat butter and both sugars in a large mixing bowl until creamy.
- Add egg and vanilla.
- In a separate bowl, mix oats, whole wheat flour, all purpose flour, wheat germ, oat bran, cinnamon and baking soda into a large mixing bowl.
- Add dry ingredients to wet ingredients
- Add nuts, raisins and chopped dates
- Scoop dough onto lined baking sheets.
- Press 1 date half into the center of each cookie.
- Bake cookies for 15 minutes.
White Chocolate Chip Mint Cookies
Ingredients
- 1/4 cup butter softened
- 1/4 cup oil
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp vanilla
- 1 1/2 cups flour
- 1/2 cup white chocolate chips
- 1 mint aero chocolate bar chopped
- 1/2 cup mini M&M’s
Directions
- Preheat oven to 350 degrees
- Cream butter, oil and both sugars until creamy
- Add egg and vanilla extract
- In a separate bowl, combine flour, salt, baking powder and baking soda.
- Combine dry ingredients to butter mixture.
- Add chocolate chips, aero chocolate bar pieces and m&m’s
- Spoon out onto lined baking sheet and bake for 12 minutes
Apple Spice Muffins

Chocolate Zucchini Muffins
Ingredients
- 1 cup all-purpose flour
- 1 cup white sugar
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp ground cinnamon
- 2 eggs
- 3/4 cup vegetable oil
- 1 1/2 cups grated zucchini
Directions
Preheat oven to 350 degrees F
In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon.
Add the eggs and oil, mix well. Fold in zucchini until they are evenly distributed.
Pour into the muffin cups and bake for 20 minutes.
Croque Madame
Ingredients
- Puff Pastry, thawed to room temperature
- 1 whole egg, whisked in a small bowl with a teaspoon of water for egg wash
- 6 ounces Gruyere cheese, shredded
- Diced ham or bacon
- 4 whole eggs
- Kosher salt and ground black pepper
- Chives, chopped
Directions
- Preheat oven to 400 degrees F.
- If using bacon, cook bacon in a frying pan. Remove and let rest on a paper towel.
- Roll out each puff pastry sheet into an equal square, cut each sheet into 4 equal squares. Lay each square evenly spaced apart sheet pans lined with parchment paper. Poke holes in the centre of the puff pastry with a fork, brush with egg wash and season with kosher salt.
- Lay ham or bacon on top of the puff pastry. Sprinkle the cheese evenly in a circleon the ham and leave a space in the centre to crack the egg into. Place in the oven and bake for 10 – 15 minutes until the edges are beginning to puff.
- Remove from the oven, use the back of a spoon to press a slight divot into the centre of the puff pastry and crack the eggs into each well. Season egg with kosher salt and ground black pepper.
- Bake for an additional 10 – 15 minutes until egg whites are set and puff pastry is golden. Remove and garnish with chives, serve immediately.
Ham, Cheddar Cheese, and Chive Scones
Ingredients
- 1 2/3 cups flour
- 2 tsp sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 cup cubed cold butter
- 1/2 cup cut up ham, sausage or cooked bacon
- 1 cup grated cheese
- 2 chives finely sliced
- 3/4 cup whipping cream (+ 2tbsp whipping cream or milk)
Directions
- Preheat oven to 400 degrees.
- Combine flour, sugar, baking powder and salt in a bowl.
- Work in the butter with a pastry blender until flour mixture is crumbly, with some larger butter pieces still present.
- Mix in grated cheese, meat and chives into a bowl. Stir thoroughly.
- Add 3/4 cup of whipping cream and mix until dough forms. Transfer the dough to a floured work surface.
- Roll the dough to a circle approximately 7” in diameter and 3/4” thick. Cut dough into 8 wedges.
- Place the wedges on a lined baking sheet and brush the tops of each scone with the remaining 2 tbsps of cream/milk
- Bake for 20 minutes
Pumpkin Spice Muffins
Ingredients
- 3/4 cup sugar
- 1 egg
- 3/4 cup canned pumpkin
- 1/4 cup vegetable oil
- 1/2 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1 tsp ground cinnamon
- 1/2 tspt baking soda
- 1/4 tsp salt
- 1/4 cup packed brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 cup flour
- 1/4 cup melted butter
- 1 cup powdered sugar
- 1/4 cup softened cream cheese
- dash of ground cinnamon
- dash of milk
Directions
- In a large bowl, beat sugar, eggs, pumpkin, oil and vanilla.
- Combine the flour, cinnamon, baking soda and salt
- Add to egg mixture and mix well.
- Spoon into muffin cups
- Combine topping ingredients; sprinkle over top.
- Bake at 350° for 35-40 minutes or until a toothpick comes out clean. Cool on a wire rack.
Sour Cream Coffee Cake
Ingredients
- 1/2 cup butter (softened)
- 1 cup sugar
- 2 eggs
- 1 tsp baking soda
- 1 cup sour cream
- 1 1/2 cup flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 3 tbsp melted butter
- 1 cup finely chopped nuts (optional)
Directions
- Preheat oven to 350 degrees.
- Grease (with butter) and flour a 9”x 9”cake pan (I prefer a bundt pan for this recipe!)
- In your mixer, cream together butter and sugar.
- Add in eggs one at a time.
- Add baking soda and sour cream and mix.
- In a separate bowl, combine flour, baking powder and salt
- Gradually stir dry ingredients into the wet mixture until incorporated.
- Spoon 1/2 of your batter into your (already greased and floured) cake pan
- Mix together the brown sugar, cinnamon, melted butter and nuts (optional) and sprinkle HALF of this mixture over the batter.
- Spoon the second half of the batter into the pan and sprinkle with the remaining cinnamon/sugar mixture on top.
- Bake for 40-45 minutes in the preheated oven or until a inserted toothpick or knife comes out clean. (If you are using a bundt pan, bake for 35-38 minutes)
- Serve with a cup of coffee or tea and enjoy!
